June 18 marks the Day of sustainable gastronomy, a United Nations initiative to claim the role of gastronomy in sustainable development.
Gastronomy is a cultural expression related to the natural and cultural diversity of the world, where all civilizations play a primary role in agricultural development, food security, nutrition, sustainable food production and biodiversity conservation.
Sustainable gastronomy promotes practices that are beneficial for both people and the planet. This involves the responsible use of natural resources, the reduction of food waste, the support of local and organic agriculture and the choice of seasonal and sustainably sourced products.
We must be clear. We don't waste! The planet is unique!
